- 500 grams boneless lamb, cut into cubes

- 2 tomatoes, pureed

- 2 green chilies, slit

- 1 teaspoon fennel seeds

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon Kashmiri chili powder (for color, optional)

- 1 teaspoon coriander powder

- 1 teaspoon garam masala

- 1/2 cup plain yogurt

- Salt to taste

- Fresh coriander leaves for garnish

- 3 tablespoons oil


Instructions:

1. Heat oil in a pan and add cumin seeds and fennel seeds. Let them splutter.

2. Add chopped onions and sauté until golden brown.

3. Add ginger-garlic paste and green chilies. Sauté for a minute.

4. Add tomato puree and cook until the oil separates from the mixture.

5. Add turmeric powder, red chili powder, Kashmiri chili powder (if using), coriander powder, and salt. Mix well.

6. Cook the spice mixture for a few minutes, then add the lamb cubes and mix well to coat them with the spices.

7. Reduce the heat to low, cover the pan, and let the lamb cook in its own juices for about 30 minutes. Stir occasionally to prevent sticking.

8. In a separate bowl, whisk the yogurt until smooth. Add the whisked yogurt to the lamb curry and mix well.

9. Cover the pan again and let the curry simmer for another 30 minutes or until the lamb is tender and the flavors have melded together.

10. Sprinkle garam masala over the curry and mix well. Adjust salt and spices according to taste.

11. Garnish with fresh coriander leaves and keep the Rogan Josh warm.
