Ingredients:
- 2 cups spinach leaves, washed and chopped
- 200 grams paneer (Indian cottage cheese), cubed
- 1 medium-sized onion, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon dried fenugreek leaves (kasuri methi)
- 2 tablespoons oil or ghee
- Salt to taste
- Fresh cream (optional, for garnish)
Instructions:
1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent and golden brown.
3. Add ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell of ginger-garlic disappears.
4. Add tomato puree and cook until the oil separates from the mixture.
5. Add turmeric powder, red chili powder, and garam masala. Mix well and cook for a minute.
6. Add the chopped spinach leaves and salt to taste. Mix everything together and cook until the spinach wilts down and becomes soft.
7. Remove the pan from heat and let the mixture cool down a bit. Once cooled, transfer it to a blender or food processor and blend until smooth. You can add a little water if needed to achieve a smooth consistency.
8. Pour the blended spinach mixture back into the pan and bring it to a simmer over low heat.
9. Add the cubed paneer and dried fenugreek leaves. Mix gently to combine everything together.
10. Cook for a few minutes until the paneer is heated through and absorbs the flavors of the spinach.
11. Remove from heat and garnish with a drizzle of fresh cream (optional).
12. Serve hot with naan, roti, or rice.
